Guest guest Posted October 9, 2006 Report Share Posted October 9, 2006 Check out my Roasted Butternut and Carrot Soup recipe in the files. This is one our favorite ways to use Butternut Squash. It is just delicous and a creamy smooth soup. With Acorn Squash, I cut it in half and scrape out the seeds(save to roast) and then cut in quarter circle rings and put in a covered casserole dish with a little bit of water and cook until tender. I then cut off the skin. Use a folk to hold the squash while you cut it off with a knife, because it is hot. Or folks can do this at their plate. Some folks sprinkle some cinnamon/cardomom and brown sugar mixture lightly over the slices when they bake, but I love them just plain. Another way to fix Acorn Squash, is to cut in half, scape out the seeds and stringy stuff, put into a tall casserole dish, skin side down. Put a little water in the bottom of the casserole dish. In the open Acorn Squash half put a little Smart Balance/butter, brown sugar/ or sugar in the raw and a sprinkle of cinaminon. Cover and bake until tender in either an oven or the microwave. Before you put in the casserole dish take a smal slice off the bottom of the acorn squash without cutting all the way thru the squash. This way it will set flat. I use this squash for a wonderful soup. It only takes 45 minutes baking in the oven at 400. Cut it in half, take the strings and seeds out, turn it over in a baking pan into which you have put 1/2 a cup of water. Be sure you prick the skin...it just helps it cook without breaking apart. I cut mine in half, bake at 350F until tender (approx 40 mins), fill each cavity with cajun spices and maple syrup and serve.
