Guest guest Posted October 9, 2006 Report Share Posted October 9, 2006 Crockpot Fresh Apple Coffee Cake 2 cups biscuit mix 2/3 cup applesauce 1/4 cup milk 2 tablespoons sugar 2 tablespoons butter or margarine, softened or melted 2 apples, peeled, cored and diced 1 teaspoon cinnamon 1 teaspoon vanilla 1 egg egg, lightly beaten 1/4 cup biscuit mix 1/4 cup brown sugar 2 tablespoons firm butter or margarine 1 teaspoon cinnamon 1/4 cup chopped nuts, if desired Combine first 9 ingredients. Spread in a lightly greased 3 1/2 quart crock pot (or spread in a lightly greased baking dish which fits in a larger sized crock pot). Combine streusel ingredients with a fork or pastry blender; sprinkle over the batter. Guest guest Posted October 9, 2006 Report Share Posted October 9, 2006 Hmmmm, on the site for the company that makes my awaited pressure cooker, they have for sale a pan insert for baking (yep, that's what I said!) in a pressure cooker......My brain is ticking here......I wonder how long one would cook this recipe (in my case, veganized) in a pressure cooker???? LOL! Hmmmm....... Guest guest Posted October 10, 2006 Report Share Posted October 10, 2006 In a pressure cooker book it has instructions for cake: using a greased & floured souffle or bundt pan on a trivet, cake is 40 minutes at medium-low heat, just to maintain even pressure, or full pressure for 20 minutes. Allow pressure to drop naturally, about 8-10 minutes. You seal the cake pan with foil. I was suprised, you can even make cheesecake in a pressure cooker! Janis , " Thia .... Guest guest Posted October 10, 2006 Report Share Posted October 10, 2006 yeah, I knew about the cheesecake...which is why I am considering purchasing the pan insert for my new pressure cooker...but wondering if veganizing the cheesecake will make any difference...I dunno, but now that I know I can play around trying other things like coffee cake as well, it just may be worth the ten bucks for the insert... (as I dont have a souffle, or bunt pan, nor does my PC have a trivet...athough, the site has one offered for sale...) It's basically a cake pan with legs; and it's stainless steel! (whoohoo!)
