That and the stuff we called " shitty cheese " (sharper than sharp cheddar), which seemed perfectly designed for cutting the sweetness of apple pie. A quick Google only turned up one recipe. Guest guest Posted October 12, 2006 Report Share Posted October 12, 2006 Well, I am thinking maybe marinating chunky pieces of tofu (the kind I buy has a feta texture) in some of those ingredients, and using it chunky (rather than blending smooth). It wont be the right color, but just may give a similar taste.... I have to make a trip up to Richmond (an hour away) to get the tofu; so it will be some time before I try this. And that is what disinterested me about the recipe-- but it still gives me ideas to work with that I hadn't thought of prior to reading it. Actually, it's how I do most of my cooking; I read cookbooks like novels, and then do my own thing in the kitchen. Thanks again for finding it, and sharing the link.
