vegan bleu cheese

I too was a big fan of the bleu cheese. That and the stuff we

called " shitty cheese " (sharper than sharp cheddar), which seemed

perfectly designed for cutting the sweetness of apple pie. :)

 

A quick Google only turned up one recipe. I haven't tried it, so if

you do, please let us know if it's good or bad:

There were also discussions on some forums where commercial products

were indicated, but they were generally shunned for their

hydrogenated fats.

Hmmm, interesting. the fact that it is blended smooth, does not impress me,

but the ingerdients do give me ideas to work with.....

I am not a blue cheese fan, but I would be curious to know how this turned

out.

Well, I am thinking maybe marinating chunky pieces of tofu (the kind I buy

has a feta texture) in some of those ingredients, and using it chunky

(rather than blending smooth). It wont be the right color, but just may

give a similar taste....

 

I have to make a trip up to Richmond (an hour away) to get the tofu; so it

will be some time before I try this.

To be fair to the link, it was for a bleu cheese DRESSING. :)

I agree, mashing up marinated tofu with a fork for a feta-like

texture may work better.

Yes, I had caught that. And that is what disinterested me about the

recipe-- but it still gives me ideas to work with that I hadn't thought of

prior to reading it. Actually, it's how I do most of my cooking; I read

cookbooks like novels, and then do my own thing in the kitchen. ;)

I'm the same way with recipes. They only server as fodder for my own

creations. :) As it is, that was the *only* one that came up in the

first page of Google hits. Don't worry, you've inspired me to try to

create a vegan bleu cheese as well. We'll get it! ;)
