I've only been a vegetarian (aiming to be vegan- but still learning) since May and haven't had much of a chance to experiment with recipes. My husband (not veg) and I are having some friends over next week for dinner it will be a couple with a 2, and 12yr old any meal suggestions for a house full of meat eaters, I'd like something great that they won't miss the meat! Guest guest Posted October 14, 2006 Report Share Posted October 14, 2006 HI: You can do a lasagna with veggies, I make mine using chopped frozen spinach, chopped frozen broccoli, shredded carrots and some chopped black olives. You can serve a big mixed green salad and some garlic bread with it. You can also do vegetarian refried beans, and do a make your own taco thing. Have chopped lettuce, tomato, olives, jalapeno peppers, bell peppers, onions, guacamole. You can also use some of the vegetarian crumble to make a filling for taco's. Just look for my name under the recipe and you'll see the one that I am referring to. %2ARecipes/ Here are some suggestions Soup night. I make the Potato " Chicken " Noodle Soup, Italian Veggie Soup(like Minestrone Soup) and Lentil Soup,(under Hot soup recipes in the files) along with crusty Garlic Bread and Fruit Salad or Macaroni Salad or Mandrain Romaine Salad Homemade Pizza Night I make homemade pizza(recipe in the files) You can either use the crust recipe in the files or use 2 packages of Pizza Crust mix made up. I use jarred Pizza Sauce, brown some Vegetarian Burger(Worthington Brand(canned) or Morningstar Brand Crumbles(frozen). I bake the crust in the oven for about 6 minutesfirst, before adding any toppings. We love pinapple tidbits, onions, bell peppers, olives, mushrooms, sliced tomatoes, etc. on ours. Serve with salad and homemade brownies or rootbeer floats Chinese Night Make Stir Fry http://tinyurl.com/sdmu3 and Vegetarian Fried Rice http://tinyurl.com/y2cukv (Both recipes in the files). Sam's Club has Vegetarian Egg Rolls in the Frozen Section(mingh brand). We really like these with some Spring Roll Sauce that you can buy at an Asian /Korean Market. Chinese Coleslaw is delicious with this meal theme also. Have sliced oranges and dessert of choice. Serve Hot Green Tea All American Meal Vegetarian " Meat Loaf " http://tinyurl.com/telp7 along with twice baked potatoes and Garlic Green Beans(open a can of green beans and drain. Put some smart Balance in a Frying Pan and heat. Add minced fresh garlic. Saute lightly and add drained green beans and a pinch of Thyme) and continue sauting until heated thru. Serve with Garlic Bread and a salad. Corn on the Cob is good with this also.
