I'd probably increase the recipe by 1/4 if that's doable and add an additional 5 mins. baking time (but keep your eye on it). Cooking times tend to vary anyway depending on how hot your oven is. I very rarely depend on baking time alone....just use my judgment. Don't over fill the pans just to use up the batter. You can wind up with a big mess. How much more do I need to increase the recipe in order to properly fill the cake pans and how much longer should I have to cook it? Guest guest Posted October 15, 2006 Report Share Posted October 15, 2006 You run a chance of messing up the batter if you adjust measurements for a few inches more cake, you will have 2 flatter 9-inch cakes so that's what I would do or pour all the batter in a bundt pan. Guest guest Posted October 15, 2006 Report Share Posted October 15, 2006 Rachael, Try geometry. 8 " times pi(3.14)= 25.12 " times 2 = 50.24. 9 " x 9 " = 81 " You would lack a little more than 50% of what you would need for 2 8 " pi(e) tins if you used the 9 " . Usually the square ones are deeper than the round ones though. If I were you, I would just put all the batter in the 9 " and call it good. Set the times for less time and watch it carefully. If you used 2 9 " square pans and put half the batte in each, it would be much less than half as high as if you used the 8 " rounds. It would come out more as a cookie. Not my first choice of recipes, but it will work. I'm trying to plan a surprise party for my partner; 20-something people are coming, all with different food issues (1 celiac, a few vegetarians, a few vegans, a few die-hard carnivores...) and I have less than a week (with my partner being home most of every day) to get as much secretly prepped, bought, cleaned, etc., as possible. I just don't want to deal with the cake potentially not coming out well.
