Guest guest Posted October 16, 2006 Report Share Posted October 16, 2006 We love making Carmel Apples. We make campfires more often and roast marshmallow and make smores with them. We roast Vega-links or Big Franks (veggie hot dogs) on the fire. I simmer Cinnamon sticks and whole cloves in a miniature simmering crock pot on the kitchen counter. We make all kinds of breads, muffins, cookies, pies and cakes with pumpkin. We buy the Ms. Smith Mincemeat pie and bake some. We love the Japanese Persimmons that ripen this time of year. Hot teas, hot chocolate and hot cider are enjoyed here on a daily basis. We eat soup, stews and chili's here year around. They are healthy one dish meals, which are a favorite of mine. We decorate the house with fall decorations that take us all the way thru until Thanksgiving. Soon we will start searching for dessert recipes for the Christmas Cookies/bars and balls that we make this year at Thanksgiving and Christmas to share with neighbors, friends and co-workers. We go to Florida this time of year to and pick oranges/grapefruits by the box full and bring home to make fresh juice with for weeks We look forward to more camping in the cooler weather, and our annual church potluck/hayride at one of the members huge ranch. I love the smell of a campfire and a drive thru the mountains to see the fall coolers. Do any of you make baked Apples? Baking sweet potatoes, and enjoying them for dinner with a spoonful of maple syrup and a shake of cardamom on them. Big bowl of split pea soup with barley it in. Enjoying my yummy " root soup. I have been really wanting to find a good maple bean recipe, which seems so appropriate this time of year. I've tried several recipes and all have not been worth making again. So today I kinda made up a recipe using some other recipes and using the pressure cooker. It was a failure, yet again, but I think this time it's tweakable. I was at a Women's Retreat a few years back and they had Maple Icing on Pumpkin Cookies and a few toasted chopped nuts on top. Oh they were so good. They would share the recipe...... Don't you just hate it when folks are stingy with their recipes? LOL Maple Bean Recipe? I've never thought about flavoring them with maple syrup except maybe in baked beans. Guest guest Posted October 17, 2006 Report Share Posted October 17, 2006 This is the basic recipe I use but I vary it according to what I have, using different nuts and spices sometimes, or adding in cranberries and flax seed. And I usually leave out the sugar and it doesn't harm it. Apple Raisin Bread INGREDIENTS: 1 1/2 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon baking soda 1 teaspoon salt 1 1/4 teaspoons ground cinnamon 1/4 teaspoon ground nutmeg 2/3 cup packed brown sugar 1 cup rolled oats 1 1/2 cups grated apple 1/4 cup chopped walnuts 1/4 cup raisins 2 eggs 1/4 cup milk 1/4 cup vegetable oil DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 1/2 x 4 1/2 inch loaf pan. 2. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, brown sugar, and oats. Add apple, nuts, raisins, eggs, milk, and oil. Mix until dry ingredients are moistened. 3.
