Mari Vegetarian Boullion 3 large carrots, diced 2 medium potatoes, diced 2 medium tomatoes, quartered 1 medium onion, peeled and sliced thin 1 stalk celery, diced 1 bunch of celery, leaves only, chopped 3 leaves, green leaf lettuce 2 quarts cold water 1/2 cup parsley, chopped 2 sprigs fresh thyme, chopped salt to taste pepper to taste In medium saucepan, combine carrots, potatoes, tomatoes, onions, celery stalk, celery leaves, and lettuce. Add 2 quarts cold water. Bring to boil. Reduce heat and simmer 20 minutes, covered. Add parsley and thyme to soup. Cook 15 minutes, covered. Strain soup broth through sieve. Discard vegetables.
