I use this when I feel a cold coming on as well as a

base for recipes.

Vegetarian Boullion

 

3 large carrots, diced

2 medium potatoes, diced

2 medium tomatoes, quartered

1 medium onion, peeled and sliced thin

1 stalk celery, diced

1 bunch of celery, leaves only, chopped

3 leaves, green leaf lettuce

2 quarts cold water

1/2 cup parsley, chopped

2 sprigs fresh thyme, chopped

salt to taste

pepper to taste

 

In medium saucepan, combine carrots, potatoes,

tomatoes, onions, celery stalk, celery leaves, and

lettuce. Add 2 quarts cold water. Bring to boil.

Reduce heat and simmer 20 minutes, covered.

Add parsley and thyme to soup. Cook 15 minutes,

covered.

Strain soup broth through sieve. Discard vegetables.

Add salt and pepper to taste. Serve hot or refrigerate

for use in other recipes.

Serves 6-8

Speaking of tomatoes, what are they priced at in your area? They are $3.98

per pound here and I am using canned because of it.

Sure wish that was the case here. It is horrible!! And they are not good

looking, either.

That is terrible. I wouldn't pay that price either!

Hope they are down soon in price and quality better.

I haven't bought fresh Tomatoes for awhile they are rather high. You wouldn't

think they would be seeing that we just finished the season. I have been using

canned. Judy H
