SPINACH-TOFU BALLS [EGG AND DAIRY FREE]

 

This isn't your ordinary spinach ball-it's spiced up

and packed with

protein.

 

1 10-oz package frozen chopped spinach, thawed and

drained

1 cup tofu, crumbled

1/4 cup gluten flour

1/2 cup soft breadcrumbs

4 cloves garlic, minced

1/2 teaspoon onion powder

 

Combine the gluten flour with the breadcrumbs. Next,

add the garlic

and onion powder. Mix well. Now add in the spinach

followed by the

tofu. Spoon teaspoon-sized balls onto a nonstick

cookie sheet. If the

mixture is hard to work with, add a few tablespoons of

water. Bake for

35 minutes at 350 degrees.
