But my mother made it when I was there in august. It taste alright. Ingredients 2 tbs. Low-Fat margarine, melted Egg Beaters (equal to 3 eggs) 1 cup plain flour 1 tsp. salt 1 tsp. baking powder 1 cup skim milk 1 tsp. dill 4 cups fresh spinach, chopped 1 lb. fat-free cheese, grated 2 pkg. Equal 1 tsp. butter flavoring Preparation Melt margarine in 9x13 pan. Sift together flour, Equal, salt & baking powder. Beat egg beaters in a large mixing bowl. Add flour mixture & milk alternately to egg beaters & mix well. Add dill, spinach, 3/4 lb. grated cheese. Pour batter into prepared pan. Top with remaining cheese. Bake in preheated 375° oven for 35 minutes. I just want it to be made in more common foods in my larder and still remain low fat. So would we be able to substitute applesauce or pureed prune for the margarine or butter if you are not a vegan or milk intolerent? I am a lacto ovo vegetarian so I would use eggs, although tofu can be substituted for eggs in baking. Fat free cheese is unavailable at my local Coop, although Safeway may carry it [the only union grocery store in my area besides the Coop]. Butter flavoring--I have never seen that--is it a synthetic flavoring? I do not know the sweetening equivalent of equal to sugar or honey or even the herb stevia? In a savory bread like this it would make it too sweet though. You can use regular oil instead of butter. Don't use whipped margerine or soy margerine, it is mostly air & water. Tofu does not 100% substitute for eggs in baking, you may not get the same result. When used as a leavener (typically 2-3 eggs or more per recipe) substitute one of the following for EACH egg called for in the recipe: 1 heaping tbs Ener-G Food Egg Replacer plus 2 tbs warm water or 1 heaping tbs baking powder, 1 tbs oil plus 1 tbs warm water or 1 heaping tbs baking powder, 1 tbs apple cider vinegar plus 1 tbs warm water If the egg is just used for a binder, like in rice loaf, Tofu is fine. Butter flavor is the same fake stuff they use on theater popcorn. If you are baking yeast bread, you NEED the honey or sugar for the yeast to feed on. Do not substitute artificial sweetener there. The recipe you have below does not have enough flour to be converted to a yeast bread, with only one cup flour, 3 eggs and a whole pound of cheese it is more like a popover egg type batter bread. You can find many yeast type spinach recipes, just put in " spinach cheese yeast bread " in the search window. I think there is even a couple in the recipe files here in the bread section. You can also roll out the yeast bread and then put your spinach and cheese in the center of the bread and roll jelly roll style.
