I'm all about convenience foods since having a baby and no time to prepare food. These are recipes I LOVE and eat regularly. The first two are from the book " The Allergy Self-Help Cookbook " by Marjorie Hurt Jones, R.N. This book has been incredibly helpful. Grain Free Breakfast Bars 3/4c amaranth flour 3/4c buckwheat flour 1/3c quinoia flour 1/2c chopped nuts 1/4c sunflower seeds 1/4c sesame seeds 1t baking soda 1t cream of tartar 1 1/2t pumpkin pie spice 1/2t salt 3/4c cooked chickpeas (i just used one can) 2/3c milk (I used rice) 1 banana cut into 1 " pieces 1/3c walnut oil 1/2c maple syrup 1 1/2t vanilla 2/3c raisins or chopped dates Preheat oven o 350 degrees. Oil an 11 " x7 " pan. In a large bowl, mix dry ingredients. In a blender or food processor, combine everything else except raisins. Pour into flour mix and mix well.. Mix will be thick and heavy. Stir in raisins. Spread into pan and bake 20 min. Rice and Sweet Potato Patties 1c cooked rice 1c mashed, cooked sweet potato 2-3T soy flour or quinoia flakes pinch of nutmeg pinch of salt olive oil In medium bowl, combine all ingredients except oil. Mix will seem dry. Shape into 4 patties 3/4 " thick. Heat oil in a large ninstick pan. Add patties and cook 3 minutes on each side. Black Bean Burgers 1 (15oz) can of blackbeans, rinsed and drained 1/2 onion, minced 1/6c tapioca starck 1/6c buckwheat flour 1 clove garlic, minced 1/2 T basil 1/2t oregeno 1/2 t cumin 1 egg Mash beans. Add remaining ingredients and mix well. With wet hands, divide into 3-4 equal portions and place on a sprayed med-hot grill for several minutes on each side. Catie's Tempeh " Chicken " Salad 1 package tempeh, cubed 2 stalks celery, minced 1 large carrot, minced 2T capers 2-3 scallions, minced handful of grapes, halved 1 small apple, diced 2 hard boiled eggs, diced enough mayo 1-2 T mustard juice of half a lemon salt and papper garlic powder Place the cubed tempeh in a saucepan of boiling salted water. Reduce heat to low and simmer aprox 12 minutes. Drain and set aside to cool. In a large bowl, combine everything else. Roughly chop tempeh and add to bowl. Fold everything together, cover and fridge 30 min. (I never actually make it the 30 min. This is one of my favorites) Eat with crackers from the gluten free section of the grocery store or in a sandwick made of rice bread. I have some more recipes for pan breads, but I haven't tried them yet so they aren't T & T for now.
