Stealth Veggies, Part 1

In a perfect world people would eat their veggies. Too bad this isn't

a perfect world. To that end: Stealth Veggies

 

Carrot Balls

1 pound carrots, peeled, cooked and mashed

2 eggs or egg substitute, beaten

1/2 teaspoon salt

2 tablespoons sugar (or honey)

2 tablespoons flour

1 tablespoon melted butter

Bread crumbs for coating (The Panko ones are perfection but other

brands are ok)

Oil for frying (I know, I know, frying is bad)

 

Combine mashed carrots, eggs, salt, sugar, flour and melted butter.

Shape into 1 " balls, then roll in bread crumbs. (Roll the carrot

balls in bread crumbs, not yourself) Heat oil to 365* F and fry a few

carrot balls at a time. When the balls are golden brown, remove from

oil and drain on paper towels. Try to keep the main ingredient a

secret.

 

Sweet Potato Balls

1 pound sweet potatoes, peeled, boiled, mashed

follow the above ingredients, adding cinnamon or pumpkin pie spice to

taste, if you like.

These look good enough just reading the recipe that I think Tiny

might even eat these. And yes in a perfect world everyone would eat

veggies. My house everyone eats veggies along with everything else

though too so.. This would make a perfect side dish or even snack..

When my kids were little they would eat veggies and dip with lunch and dinner.

Sometimes my son would eat almost a whole cucumber for lunch. This was before I

was vegetarian he was not a big meat eater as a kid he is more of one now.

My daughter is vegetarian now.

If you havent realized it by now that I am not a vegetarian. I do

however mostly eat veggies when my hubby is gone. You guys have

helped me quite a bit in finding different things to do for myself..

And different sides for hubby when he does come in..

 

My kids are 11 and 12. they absolutely love different veggies.. Tiny

esp.
