To that end: Stealth Veggies Carrot Balls 1 pound carrots, peeled, cooked and mashed 2 eggs or egg substitute, beaten 1/2 teaspoon salt 2 tablespoons sugar (or honey) 2 tablespoons flour 1 tablespoon melted butter Bread crumbs for coating (The Panko ones are perfection but other brands are ok) Oil for frying (I know, I know, frying is bad) Combine mashed carrots, eggs, salt, sugar, flour and melted butter. Shape into 1 " balls, then roll in bread crumbs. (Roll the carrot balls in bread crumbs, not yourself) Heat oil to 365* F and fry a few carrot balls at a time. When the balls are golden brown, remove from oil and drain on paper towels. Try to keep the main ingredient a secret. Sweet Potato Balls 1 pound sweet potatoes, peeled, boiled, mashed follow the above ingredients, adding cinnamon or pumpkin pie spice to taste, if you like. And yes in a perfect world everyone would eat veggies. My house everyone eats veggies along with everything else though too so.. This would make a perfect side dish or even snack.. Sometimes my son would eat almost a whole cucumber for lunch. This was before I was vegetarian he was not a big meat eater as a kid he is more of one now. You guys have helped me quite a bit in finding different things to do for myself.. And different sides for hubby when he does come in.. My kids are 11 and 12. they absolutely love different veggies..
