I FOUND IT!!! Sunflower Seed Cookies

I finally found the Sunflower Seed cookie recipe from long ago. All

the others had oatmeal or other things in it, the one I was trying to

find didn't have any extras. Thin, crisp, fast refrigerator cookies.

 

Sunflower Seed Cookies

2 cups sugar (I used brown sugar)

1 cup butter, softened

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking powder

3 1/4 cups all-purpose flour

scant 1/4 teaspoon salt (do not add salt if you use the salted

sunflower seed kernels)

1 cup sunflower seed kernels

 

Cream butter, sugar, vanilla together. Mix dry ingredients together,

then add to butter mixture; mix well. Shape into a 1 " wide roll, wrap

in plastic wrap or waxed paper. Chill dough in refrigerator at least

an hour. Slice about 1/4 " thick and bake about 12 minutes at 350* F.

Cool on rack.

 

I kept 6 for the two of us to share and sent the rest home with my son

for the grandkids. As a confirmed cookieaholic, the only safe way to

deal with cookies is to send them home with my son.

This sounds yummy, and may even be better with chocolate sesame seeds. But

should one of the teaspoons of baking powder be baking soda?

Where do you find those?

I hate to say this, because I feel like a broken record... You can get

chocolate covered sesame seeds at Trader Jo's. I've also seen them at a

store called Mollie Stones. So look around. :-)

I love sunflower seeds. These sound great!. I'm not really a cookieaholic (I

can stop at one) but I am a cookiedoughaholic so all I have to do is bake them.

I don't usually bake cookies but this recipe has tempted me to get a

cookie sheet and start.
