I am having a large birthday party at my house, and as one of the foods I wanted to make vegetarian tacos. I am trying to go the cheapest and simplest route. Here's my questions: - What is the best (and cheapest) meat substitute for a crunchy or soft taco? - Would TVP work, and if so, how do you cook it? - Can you cook TVP like ground meat, with onions and taco seasoning? - Does anyone have a good veggie taco recipe they would mind sharing? - I am also making veggie black beans, could I just use that instead of having a meat substitute? thanks so much, shelly Quote Link to comment Share on other sites More sharing options...

Guest guest Posted November 3, 2006 Report Share Posted November 3, 2006 Shelly, Yes, you can easily substitute TVP or frozen veggie crumbles in place of ground beef for your tacos. I usually hydrate a cup of TVP to 7/8 cup of water and 1 T. ketchup in the microwave (a couple of minutes), then throw in a frying pan where I have browned a small onion and a clove of garlic. Add a packet of taco seasoning and whatever water they recommend, and cook it down until it reaches the consistency you want. This is great in tacos, burritos and enchiladas! Enjoy!!! Debbie MEATLESS TACO FILLING 1 c water 1/2 c bulgur 1/2 c chopped onions 1/2 c chopped green peppers 8 oz tomato sauce 16 oz can kidney beans, rinse/drain or 1 can refried beans* 2 tsp chili powder 1 tsp ground cumin 1/4 tsp garlic powder 1/8 tsp cayenne pepper Bring water to a boil in a microwave safe bowl. Add bulgur; cover and set aside for about 15 minutes to rehydrate. (Or you can simmer it in a saucepan.) Heat a little oil in a large nonstick skillet over medium heat. Add onions and green pepper. Cook until tender, about 5 minutes. Stir in tomato sauce, beans, spices and cooked bulgur; mix well. Cover, reduce heat to low; heat for 5 minutes. Serve in tortillas, taco shells, or over tossed salad to make taco salad. Top with shredded cheese and toppings of your choice. *You can use cooked dry beans in place of the canned. And MS Farms or Boca crumbles. Then spinach leaves, diced tomatoes and onions, and shredded cheese. We eat burritos almost daily with beans (usually the fantastic foods, I get them in bulk at wild oats), brown rice (I cook a big batch every week or two and keep the extras in the freezer, cheese and whole wheat tortillas. Good add ons are chopped scallions, avocado, sour cream, hot sauce, salsa, cilantro, black olives, etc. For tacos, you can season the beans with the taco seasoning (I like the garden of eatin').
