Mexican Polenta Casserole

Sorry it took me so long to post this. I just went back to work after a

leave of absence and its been really busy and my 4 year old is clingy. But here

it is:

 

Basic Polenta: (from Cooking Light)

1 1/4 C cornmeal

4 C milk or water

 

Gradually add liquid to cornmeal, bring to boil, stirring constantly. Reduce

heat and cook 15 minutes.

 

2 C shredded, low fat Monterey Jack cheese

1 C salsa

1/4 C chopped cilantro

1/2 tsp chili powder

1 can drained black beans (I rinse mine)

1 C chopped green onions

 

Make basic polenta, stir in 1 C cheese and green onions. Mix remaining

ingredients in a bowl. Spray 13 x 9 baking pan w/non cook spray. 1 layer

polenta,

1 layer bean mix, 1 layer polenta. Bake at 350 for 35 minutes. (I just put

the bean mix down and all the polenta on top.)

OH I'm making this tomorrow! I just bought polenta (corn grits) from Bobs red

mill & am psyched about having some cool way to prepare them for my family :)
