Here ya go!

 

2 Cups dried kidney beans picked over and rinsed

2 T olive oil

1 medium onion coarsely chopped

2 medium carrots finely chopped

2 ribs celery w/leaves finely chopped

1 medium green bell pepper, seeded and chopped

3 cloves garlic minced

2 T chili powder

2 t ground cumin

2 t dried oregano

2 bay leaves

1 t fine sea salt

1/4 t cayenne pepper, plus more to taste

1 16 oz. can unsweetened tomato sauce

2 medium tomatoes or 1 14 oz. can Italian tomatoes coarsely chopped

1 cup vegetable stock, vegetable bouillon or water

2 cups corn kernels (cut off the cob or frozen)

 

Put the beans in a large bowl and add enough water to cover by 2 inches. Put

the bowl in a cool place and let the beans soak for 6-12 hours. Drain and

rinse beans, drain again.

 

Put the beans into large pot and add enough fresh water to cover to cover the

beans by 2 inches. Bring to a boil over high heat. Reduce the heat to low,

cover and simmer, stirring occasionally, until the beans are tender (1 1/4 to

2 hours). Drain beans and cool.

 

In a large pot heat the olive oil over medium heat. Add the onions, carrots,

celery, bell pepper and garlic. Cover and cook, stirring occasionally, until

softened.

 

Add seasonings and stir for 30 seconds. Stir in the cooked beans, tomatoes,

tomato sauce and vegetable stock. Cook, partially covered, until thickened

(about 20 minutes). Stir in the corn and cook for five minutes. Remove bay

leaf.

Does anyone have the book above written by John Robbins? If so, there

is a chili recipe in there that I would love to have. I have lost my

book and am cooking chili for a " Chili Cook Off " . It is by far my

favorite recipe. People who eat meat have even said " I don't miss the

meat! "

 

I went to the library, but they had to order it from another library,

so I doubt it will be here in time.

Hopefully this will help!! go to amazon's " search inside " feature. Once
