Guest guest Posted November 14, 2006 Report Share Posted November 14, 2006 EAGLE BRAND CHOCOLATE FUDGE 12 oz. semi-sweet chocolate chips 1 can Eagle Brand milk 2 heaping tbsp. peanut butter Place chocolate chips and milk in microwave safe bowl. Cook on high for 5 minutes. Remove from microwave, stir in 2 heaping tablespoons of peanut butter. Spread in pan. Cool and cut. Though, I didn't add peanut butter, but a " half cap full " of vanilla. I mixed half simi-sweet and half milk chocolate chips. And used a double boiler (vs the microwave). I always got told it was the best fudge they ever tasted! :-D I am desperately wanting to find a non-dairy sub for this that tastes this good, and this easy..... I have never liked fudge made with granulated sugar...never seems to be creamy enough to me. I have one to try out--- involving toffutti cream cheese and powdered sugar. And I have an inkling to try working on one on my own with cashew's (which make a very tasty cream base for " ice cream " if blended long enough). One day I'm actually going to get around to doing these....lol. The toffutti is already in the fridge....good thing it has a long date!! haha.
