Guest guest Posted November 14, 2006 Report Share Posted November 14, 2006 Unusual potato cake 2 cups of sugar 1 cup of margarine 4 eggs - whites beaten separately 1 cup mashed potatoes 2 cups sifted flour 2 tsp. baking powder 1/2 cup milk Cream sugar & margarine together then add egg yolks, beat, and add rest of ingredients. In a separate bowl beat egg whites till stiff then folk in egg whites to mixture. Put in greased 9 X 13 glass baking dish. Bake at 350 for 45 minutes. Allow to cool. Most generally I send ones that I have tried or am doing at that moment. I will try it but as busy as I have been it may not be until after Thanksgiving.. My mother just told me she wanted some of the Cardamom sweet bread that I have made 2 times.. So I have to make more of it..
