Guest guest Posted November 15, 2006 Report Share Posted November 15, 2006 @@@@@ Tomato Leek Chutney 8 tomatoes, peeled and diced 4 bunches leeks 1/4 lb butter 1 Tbsp. chopped garlic 5 Tbsp. brown sugar 1/2 Cup white balsamic vinegar 1 Tbsp. pepper Pinch of Rosemary Pinch of thyme Pinch of lavender Pinch of salt Dice leeks, rinse well and sauté in butter for about 5 minutes. When they are softened add the seasoning and continue to simmer for about 5 more minutes. Strain through a chinois pressing down on the leeks to extract all the liquid. Reduce liquid in a pan until it reaches honey color. Remove it from heat and add it back to the leeks. Fold in the tomato. Season with a pinch each of thyme, rosemary, salt, parsley.
