Guest guest Posted November 15, 2006 Report Share Posted November 15, 2006 Fresh Spinach Slaw 1 2/3 cups ripe olives, pitted 4 cups spinach, shredded 1 carrot, thinly shredded 1/2 cup radishes, thinly sliced 2 tablespoons green onion, thinly sliced 1/4 cup celery, thinly sliced 1 cup cottage cheese 2 tablespoons salad oil 2 tablespoons cider vinegar 1 teaspoon salt 1/4 teaspoon dry mustard 1 dash liquid red pepper seasoning Quarter olives. Combine olives, spinach, carrot, radishes, onion, and celery. Blend remaining ingredients and toss with spinach mixture. Serves 6.
