Carrots and cardamom do compliment one another in

this recipe.

Carrot Cardamom Chutney

 

1/2 cup chopped fresh coconut

1 cup chopped carrot

1/2 cup fresh orange juice

1/2 teaspoon crushed cardamom

2 pieces fresh red chili (optional)

2 tablespoons sugar

salt to taste

1/4 cup white vinegar

 

Combine all ingredients in a blender and puree until

smooth.

Makes 4 servings.
