Split Pea Parmesan Spread

 

1 cup split peas, cooked

2 tablespoons cottage cheese

2 tablespoons parmesan cheese

2 tablespoons olive oil or less

1/4 teaspoon dried basil

pepper

2 cloves garlic, crushed

 

After cooked split peas have cooled (in order to better judge consistency),

mash them up.

Then mix in other ingredients and refrigerate.

Chanda,

I tried this recipe and it makes a great dip. I added a couple more

tablespoons of cottage cheese and parmesan and pureed it in the

blender until smoothe and creamy. I also used it as a sandwich spread

and salad dressing. I love the flavor of split peas so this is a

tasty recipe for me. The color is a pretty pale sea green .

I bet this is good. I also love split peas. I'll have to try this.
