Guest guest Posted November 28, 2006 Report Share Posted November 28, 2006 apricot rice pilaf This fragrant and sweet rice pilaf makes a good side dish for Middle Eastern foods. If you are in a hurry substitute white for the brown rice. 1/4 cup olive oil 1 1/2 cups brown rice 1/2 cup dried apricots - slivered 1/2 cinnamon stick 8 cloves 4 black peppercorns 1/4 teaspoon cardamom 3 cups water 2 medium onion - sliced 1/3 cup raisins 1/2 cup pine nuts Heat half the oil in a medium saucepan. Add the rice and saute for 5 minutes, stirring gently. Add the apricots, cinnamon stick, cloves, peppercorns, cardamom, salt and pepper (to taste), and the water. Bring to a boil, then cover tightly and leave to simmer for 45 minutes. Turn off the the heat and leave covered. In a medium frying pan, heat the remaining oil over medium heat. Fry the onions until soft and slightly browned (10 minutes). Stir into the rice mixture. I made it for dinner tonight, but since I hadn't gotten this e-mail before I made it, I added the Raisins close to the end of the rice cooking and toasted the Pine Nuts in a dry frying pan(same one that I used to toast the rice in) and tossed them in at the end too. I ended up adding about 1/4 c. of Sugar in the Raw and some seasoned salt and reg. salt to punch up the flavor to my liking. I also used Basmati Rice. I didn't have any cinnamon sticks on hand so added about 1/4 tsp. of ground Cinnamon. I think I might add ground cloves next time also, so I don't have to pick out the hard cloves. I think the flavors get better the longer they sit together. I just got a bit more of it and it taste had improved a lot. I cant get the kiddos to eat the Apricots very often but this is one thing that they will eat.. Samantha Loves rice so its a hit with her just because of the rice..
