The Cautious Vegetarian..

Okay, as a meat eater, I was cautious. I like my food plain, visible,

and simple. As a vegetarian, it's a whole new ball game out there!

Personally, I could live on my rice, tofu and squash bowls forever,

but I'm really trying to broaden my horizons, and make sure my diet is

interesting and nutritionally sound. I have purchased cookbooks,

cruised the recipies, but frankly, everything is too exotic for my

bland, simple palate. I was bold enough to go to whole foods recently

and purchased: polenta, TVP, tempeh, lentils and quinoa. I am finaly

ready to cook them, I think. (New foods must sit in the cupboard and

be stared at for an appropriate amount of time). Any suggestions on

vey simple ways to prepare these would be great :)

These are a few of my favorite things...lalalalaaaaa....

Quinoa Stuffed Poblano Peppers - no idea where I originally got the recipe,

but it's now available online. I'll post it in a separate post in a sec.

Lentil soup or any bean soup is wonderful. Hard polenta cut into finger sized

pieces & fried are deeeeeelectable. Soft polenta under a vegetable ragout is

nice. Ummmmmmmm....brain dead. that's all for now.

Oh my favorite, quinoa!! Get a very fine strainer and rinse it really well, then

get 2 parts vegetable broth to 1 part quinoa, boil the broth first and then add

in the quinoa. Chop up some onions and mushrooms pretty finely and add those in,

boil for about 15 minutes, and you're done! It smells heavenly while it's

cooking and it tastes wonderful. You can always make it without the onions and

mushrooms if you're in a hurry. That's how I cook it for my dogs since onions

are bad for them and they don't like mushrooms, and it still tastes excellent.

 

For the lentils, just put them in the crock pot on low all day, cook some

cornbread, and get some McCormick peppercorn medley in the grinder. Small bit of

salt is good too. That together is a wonderful meal. Next time you could try

pinto beans and cook those the same way, and chop up tomatoes and onions to put

in them. That's a very good meal, very filling and good for you too.
