This was the recipe I ended up making to use up my applesauce (actually still have some left), and I too sub'd cranberries for the raisins. I do this often as they are much less calorie-dense. And I always sub whole wheat flour for all the flour in a recipe. Like I've said before, if I'm making it for myself, I don't mind doing things to make it healthier, whereas when baking for friends you frequently have to worry whether it's sweet enough, etc.. Seems in the same vein, that all the healthy cooks on the reality contests get knocked out real early. Anyway, without there being fat in the recipe, they were like little muffins. I like crunchier snacks, so after a day in the fridge, I threw them back on a baking sheet and set them at 425 for 15 minutes to crisp up the outsides (the insides are still luciously soft). I suppose if I would have greased the cookie sheet insead of using parchment paper they would have been a little crisper. My husband didn't really care for them but thats ok more for my daughter and me. If I would have had whole wheat pastry flour I would have used that instead of the mixture of flours. Sift together dry ingredients and stir in. Add oats and raisins. Drop by spoonfuls onto lightly greased cookie sheet.
