Applesauce Oatmeal Drops

Too funny! This was the recipe I ended up making to use up

my applesauce (actually still have some left), and I too sub'd

cranberries for the raisins. I do this often as they are much

less calorie-dense. And I always sub whole wheat flour for

all the flour in a recipe. Like I've said before, if I'm

making it for myself, I don't mind doing things to make it

healthier, whereas when baking for friends you frequently

have to worry whether it's sweet enough, etc.. Seems in the

same vein, that all the healthy cooks on the reality contests

get knocked out real early. :( Anyway, without there being

fat in the recipe, they were like little muffins. I like

crunchier snacks, so after a day in the fridge, I threw them

back on a baking sheet and set them at 425 for 15 minutes to

crisp up the outsides (the insides are still luciously soft).

A good, quick, easy treat indeed.

Hi Erin:

 

I really like them... I suppose if I would have greased the cookie sheet insead

of using parchment paper they would have been a little crisper. My husband

didn't really care for them but thats ok more for my daughter and me.

 

If I would have had whole wheat pastry flour I would have used that instead of

the mixture of flours. I had used it up the othernight when my daughter and I

made a big peanut butter cookie for her friends b-day.

Applesauce Oatmeal Drops

 

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 cup white sugar

1/2 teaspoon salt

3/4 cup natural unsweetened applesauce

1 cup rolled oats

1 cup sifted all purpose flour

1/2 cup seedless raisins

 

Mix sugars and add applesauce. Sift together dry ingredients and stir in. Add

oats

and raisins. Drop by spoonfuls onto lightly greased cookie sheet. Bake at 375

degrees

for about 10 minutes.

mmmm an eggless cookie recipe! Im actualy gonna try those with cranberries

instead of raisins. I will try them on my family for Christmas :)

It does hurt, I know. Kindness and caring, love, kind of melts all those

defences and then all the hurt and need comes up and it HURTS. It's natural

Faith, no matter what we believe in is an important motivator in life. There

are reasons why something is the way it is, though we dont always know why.

Problems are never a way to punish us, sometimes they are a way of making us

better and stronger, more compasionate and knowlegable people inside. We

may worry, we may feel down on the world but we must always remember that

faith is what brings us together and that god, no matter what we call him or

her has not punnished us, only trusted us with an extra special gift. ~ Me
