New Member Hi Becky - Eggplant

I've salted and them dipped them in egg and then into a bowl of Italian bread

crumbs, sprayed them with Cooking Spray, like Pam, and then baked them until

crispy. Also look in the Asian folder of recipes. I've got a couple of

Eggplant recipes we really like, that are posted in there.

The files are an amazing resource on this group and there's even an

Eggplant file all to itself tho' eggplant appears in some of the soups

and pasta dishes too in those folders. :) Let us know what you decide

to do with your eggplant.

I do too, and I live in Michigan where it was a balmy 19 degrees yesterday!

I put mine on the grill. Sliced, sprayed with olive oil, and sprinkled with

Mrs. Dash. And don't tell me that it's not the season for the grill. I

grill all year round. Of course, I don't live in Minnesota!

Ha! Amy? When I lived in Michigan, I still grilled all winter.

LOL I DO live in Minnesota! And we do use our grill all year round! ;-D

not as much of course in the winter, but we still do use it occasionally!!
