Guest guest Posted December 3, 2006 Report Share Posted December 3, 2006 I've salted and them dipped them in egg and then into a bowl of Italian bread crumbs, sprayed them with Cooking Spray, like Pam, and then baked them until crispy. Also look in the Asian folder of recipes. I've got a couple of Eggplant recipes we really like, that are posted in there. And don't tell me that it's not the season for the grill. I grill all year round. Of course, I don't live in Minnesota!
