huge surprise from husband person Veggie Wraps

Well, I am still in bed, still can't do anything and am going more wacko. VERY

tired of ramen noodles, dry cheerios and vegetarian vegetable soup, basically

the only things that will go down and not be rental food.

 

He researched one of my favorite sites on his own and made the following wrap

sandwich for me tonight (minus the sprouts which the store didn't have.)

Everything he bought was premade, from the grated carrots to the hummus. Real

food!! I couldn't eat all of it but what I ate has stayed down. (so far.) He

got the recipe from one of my all time favorite sites. www.pcrm.org (Physicians

Committee for Responsible Medicine.)

 

Veggie Wraps make a perfectly delicious, vegetable-rich meal.

 

¼ cup sunflower seeds

4 whole wheat tortillas

1–2 cups hummus

1–2 cups mixed salad greens or torn leaf lettuce

1 carrot, shredded

1 cup bean sprouts

Preheat oven or toaster oven to 375°F.

Place sunflower seeds in a small ovenproof dish and roast until

lightly browned and fragrant, about 10 minutes. Set aside.

Warm tortillas, one at a time, in a large dry skillet, flipping

to warm both sides until soft and pliable.

Spread each tortilla evenly with about ½ cup of hummus, leaving

edges uncovered.

Divide remaining ingredients evenly among tortillas.

Wrap tortillas around filling.

Per wrap: 240 calories; 10 g protein; 34 g carbohydrate; 9

g fat; 4 g fiber; 240 mg sodium; calories from protein: 16%; calories

from carbohydrates: 53%; calories from fats: 31%

your hubby sounds like a keeper! :) that's so sweet

he did that for you (mine wouldn't do anything like

that).

i love using hummus for wraps. my favorite is hummus

on whole wheat tortilla with fresh cucumbers,

tomatoes, black olives, and lettuce. yummmm....

sunflower seeds.)
