Guest guest Posted January 20, 2007 Report Share Posted January 20, 2007 Appelkoek Ingredients: 2 medium apples 1 1/2 cups flour 3 1/2 tsps baking powder 1/2 tsp salt 6 Tbsp granulated sugar, divided 1/4 cup margarine or butter 1 egg, well beaten 3/4 cup milk 1/2 tsp ground cinnamon Peel and cut apples into eighths (wedges). Sift together flour, baking powder and salt with 4 tablespoons of the sugar. Cut in butter. Combine egg and milk and add to flour mixture. Turn batter into greased 8 inch square cake pan. Press apple wedges partly into batter. Combine remaining 2 tbsp sugar and cinnamon, sprinkle over apple. Bake at 425 degree F for 25 to 30 minutes. The fact that it was already after 11pm when I decided that made no difference. I made a few substitutions: I used 1/4 cup Egg Beaters instead of the egg I used light vanilla soy milk, because that's all I had For the batter, I used Splenda Blend For Baking instead of all sugar (cut the sugar content down to 2 T instead of 4 in the batter). I did use regular sugar for the top. I also used only 2 T of butter, and added 2 T of applesauce. I'm always looking to cut down on calories, fat & carbs and this cake turned out beautifully even with the changes. I had largeish apples, so I used 1 1/2 of those .
