Guest guest Posted February 5, 2007 Report Share Posted February 5, 2007 This is a recipe I came up with tonight for dinner. It is really healthy and so yummy. We had it with some of the Cajun Roasted Potatoes, that I sent the recipe in for earlier today. It was really good. Enjoy, Judy Creamy Sweet Potato Tomato Bisque(soup) 3 Sweet Potatoes, peeled and diced small(rinse with water to remove starch) 2 T. Butter or Smart Balance Light(with Flax Seed Oil)(this is vegan) 1 med. onion, chopped 2 stalks Celery, chopped 3 c. Vegetable Stock ( 2 cans of Swanson Vegetable Stock) 1 c. Water 2 - 16 oz. cans of diced tomatoes(with basil, oregano)(one of my cans had some basmatic vinegar in it) 2 t. Maple Syrup(Pancake Syrup will work) 1 t. Salt 1/2 t. Celery Seed 1/4 t. Cayenne Pepper 1/4 t. Chinese 5 Spice Blend OR 1/8 t. Cinnamon and pinch of nutmeg 1 T. Parsley In a frying pan, melt the butter/Smart Balance and saute over med. high heat, the Onion, Celery and Sweet Potatoes for about 10 minutes, stirring frequently. In a large Soup Pot, add the remaining ingredients and simmer covered while the onion, sweet potatoes and celery saute in the frying pan. Add the Sweet Potato Mixture to the Tomato Mixture and simmer covered for about 15 minutes. Puree the entire amount in a Vita-Mix, Blender of Food Processor.
