Guest guest Posted March 1, 2007 Report Share Posted March 1, 2007 We made this for dinner tonight. It was very good. Mushroom Barley Soup 1 T. Canola Oil 1 large onion, diced fine 2 ribs of celery, diced fine ( I used a mandoline to diced both of these http://www.paulsfinest.com/borner.php ) 12 oz. canned mushrooms, sliced 4 garlic cloves minced 1/4 c. Braggs Liquid Amino's 1 Bay leaf 1/8 t. sage 1/8 t. turmeric 6 - 7 c. water 1/2 t. dried thyme 1/2 c. dried barley, rinsed and drained, either Quick Quaker Barley or reg. barley, though cooking time will be different. Saute the onion, Mushrooms, garlic and celery in oil for 5-7 minutes. Heat the water in a large soup pot, while these onion mixture is sauteing in a frying pan. Add the 1/4 c. Bragg's Liquid Amino's (you may use Soy Sauce, but use a little less as it is more salty), bay leaf, thyme and tumeric to the sauted veggies and cook about 1 minute. Pour this mixture into the boiling water. Add Barley. I used the Quick Quaker Barley that cooks in 10 minutes, but if using regular dry barley, cook covered for 50 minutes or until barley is tender.
