Guest guest Posted March 2, 2007 Report Share Posted March 2, 2007 Lemon New Potato Salad 1 lb. medium red potatoes 4 TB Mrs. Dash® Lemon Herb Peppercorn 10 Minute Marinade 1/2 cup nonfat yogurt 2 TB sweet pickle relish 1 cup diced celery 1/2 cup diced red bell pepper 1 TB chopped fresh parsley 1. Cook potatoes in large pot of boiling water 12 to 15 minutes, until tender. Rinse and drain potatoes in cold water. 2. Combine Mrs. Dash® Lemon Herb Peppercorn 10 Minute Marinade, yogurt, and relish and in a small bowl. 3. Combine cooled potatoes, celery, and red peppers in a large bowl. 4. Add Mrs. Dash® Lemon Herb Peppercorn 10 Minute Marinade, yogurt, relish and parsley and toss to coat. Refrigerate overnight or until ready to serve. (May be prepared a day in advance). Serves: 6. Nutrition Information: Per serving = Calories 122, % of Calories from Fat 11%, Total Fat 2 g, Sat Fat 0 g, Unsaturated Fat 2 g, Trans Fat 0 g, Cholesterol 0 mg, Sodium 77 mg, Potassium 641 mg, Carbs 24 g, Fiber 3 g, Protein 4 g.
