kohlrabi

Kohlrabi is definitely the freakiest looking vegetable. It's really

just the inflated stem of a cabbage, so you get the taste of cabbage

whether raw or cooked, but instead of a leafy head, it's a big knob,

like a water chestnut or jicama or something. The advantages over

cabbage are that it can be slivered or grated or such instead of

shredded like coleslaw, or sliced like water chestnut. Also, it keeps

like forever, being just a knob with a waxy skin. On the other hand, it

doesn't seem to be something I can eat every day for a month, which

puts it in the minority of foods.

my kids love cabbage, so I'm thinking this would be a great food to

have.. is it as healthy as cabbage??

I don't have any " recipes " so to speak - but I love kohlrabi raw in

salads w/ a little balsamic vinagrette and shredded carrots. I've

also used it in some salad wraps I've made. What worked out really

nicely was a large tortilla with some sundried tomato pesto, kohlrabi,

sprouts, carrots and cabbage. You'll definitely have your " roughage "

covered for awhile (and I wouldn't pair this w/ a 3-bean salad!) but

it's quite yummy!
