How do you cook that yellow squash?

I assume you are refering to delicious

summer squash. I just love that stuff

Here ya go...I make this about twice a week...LOVE it!

Southern Yellow Squah

 

6 - 8 yellow crookneck squash

2 medium sized onions

salt and pepper

 

Directions:

 

* chop onion and squash

*brown onion (you can use olive oil or water) in large skillet that

has

a lid

*add squash

*season liberally with salt and pepper

*cover and cook on medium stirring occasionally for about 30 minutes

(until squash is *really* tender)

I just spent last week in FL visiting my 90 year old Mother and she made

this in exactly the same way described. She had a large bag of small

yellow squash and some sweet onions and fried it up in a big ole iron

skillet and served it with pinto beans, cole slaw and homemade cornbread

(not sweet) and it was a feast. I had not seen my Mother in 7 years so

it was a feast in more ways than one. blg in pa (my first post).

mmm, I bet the cornbread was made with white cormeal in an iron

skillet? that's how I make mine...there's nothing like cooking to

take you home. the cooking I learned from my grans is one of my most

cherished gifts. welcome to the group!
