When it is really hot I don't care that much about eating, however in the summer months I love to have salads, when we had a gas grill I used to love to make corn on the cob on it. Since I no longer have the grill I am making my corn on the cob in the oven tonight. Tomorrow it is supposed to be warmer then today. Here in Scotland we are having the most abysmal summer - today we have sunshine and showers but this week it has been cold with torrential soak-you-right-through-to your-undies rain. Consequently I am still eating soups and stews rather than salads. I can't believe it is July and I still have my heating on - climate change is not serving us well at all. Here is an old favourite tomato soup: Thick Tomato and Rosemary Soup 450g (1 lb) tomatoes, chopped 350g (12 oz) potatoes, diced 1 small onion, chopped 450mls (1 pt) vegetable stock 2 sprigs of fresh rosemary ½ lemon, grated rind and juice Put all the ingredients in a saucepan and bring to the boil. The air is thin at this altitude, so the heat seems worse than it does lower down. Friday we went to the top of Pikes Peak (14,110 feet above sea level), hoping it would be cold and windy. It was!!! I didn¹t take a jacket or anything it was a lovely respite from the heat to be chilled to the bone for a bit. I tend to cook with the oven a lot less when it is this hot. More sandwiches, salads, fruit slushes, etc. I also make bigger batches of food so we don't have to cook as often. We buy and eat more fruit, too, as it requires so much less processing. And we eat milk products, so more cheeses & cool yogurt dishes. I keep meaning to learn more about the yin & yang theories of food, as some foods are supposed to be better in their ability to keep you cooler than others. But I haven't had the time and don't really know where to look. Last month my DH & I had durian for the first time, and I read that it is supposed to be a " hot " fruit. It really was! Guest guest Posted July 8, 2007 Report Share Posted July 8, 2007 PT--what a great OT question! The weather here in TX is extremely unusual. We have had constant rain this year. We are usually parched and dry and in the high temps by now. Instead, my garden is overgrown with weeds that I can't get out to control...the peach tree is so overburdened with fruit that the central main trunk portion has just broken off....and it's intertwined with the living branches that are literally lying on the ground with too many peaches. The slugs and butterflies and ants are having a holiday with all the excess. Also the little night animals are enjoying their feast as evidenced by the partially eaten down to the pits scattered far and wide with little bite marks on them. For the on-topic twist: Strange, but I've really been craving thin and spicy soups lately for my evening meal. Yesterday I had a beansprout, mushroom and tofu with soy broth. I'm also wondering if there is a good pickle recipe for almost ripe green peaches. I've got pounds of these now. Maybe they would be good for chutney? What I've been doing so far is throwing the rejects over the fence and hoping the foxes and raccoons enjoy them. It is very dry, the grass is all brown and crunches like straw when you walk on it. I've had to water my garden every day. 94 expected today, and increasing humidity. Hope we get that rain they're predicting for Wednesday.... As for the food, I cook as little as possible in this weather, except for occasional use of the grill. I hate to have to turn on my oven at all. I use a slowcooker more since I loath standing over the stove top stirring a steaming pan of food. Boiling pasta and hard boiled eggs for salads is about it. I do tend to crave cold foods: melons, salads, sandwiches & wraps, chips and fresh salsa, frozen grapes, too. Stay cool! ~ PT ~ Love, and do what you will. If you keep silence, do it out of love.
