i've heard that you can pickle green tomatoes, the same way you can pickle

cucumbers... although i'm not sure if you'd *want* pickled green tomatoes...

Can flour be used instead of cornmeal? I am not real fond of cornmeal

although I keep it in stock and eat it from time to time (just to make sure it's

not one of my favorites! <LOL>) Anyway, I have tried just dusting them in flour

and haven't been happy with the results - which usually seemed to come off into

the bottom of my pan!

 

Also, a note about any recipes that I submit - I rarely, if ever, add salt to

my cooking so it y'all like the taste of salt, please feel free to add it. This

is just a quirk of mine - and some people find my food too " bland " (which is

putting it " politely? " :o))

 

By the way, I'm in KY, too! GO WILDCATS!!!

Fried Green Tomatoes

 

1/2 cup corn meal

3 TB flour

1 tsp. salt

1 tsp. ground black pepper

1 egg

1/4 cup buttermilk

4 medium green tomatoes, sliced 1/2 " thick

Shortening for frying

 

Mix corn meal, flour, salt, and pepper together.

 

Mix egg and buttermilk together in a separate bowl.

 

Dredge tomatoes in flour mixture then in egg wash then back

in flour mixture.

 

Heat about 1/4 cup shortening in a skillet (cast iron is best).

 

Fry tomatoes in hot shortening until lightly browned on both sides.

 

Drain on paper towels and serve hot.
