Guest guest Posted August 31, 2007 Report Share Posted August 31, 2007 Carrot, Peanut and Raisin Salad with Cumin Dressing Salad: 2 to 3 large carrots, cut into julienne 2 tablespoons sesame seeds, toasted 1/2 cup dry roasted peanuts, roughly chopped 1/2 cup golden raisins, chopped 2 tablespoons finely chopped fresh coriander (cilantro) Dressing: 1 tablespoon olive oil juice of 1 lemon BLEND a tiny bit PEANUT BUTTER INTO THE DRESSING (Marsha's addition) 1 clove garlic, crushed 1/4 teaspoon sugar 1/2 teaspoon ground cumin salt and freshly ground black pepper Combine all of the salad ingredients in a large bowl. Combine all of the dressing ingredients in a small bowl. Whisk thoroughly until combined. Pour the dressing over the salad and toss thoroughly. Serve at room temperature. This salad makes a good accompaniment to a curry. Makes 4 servings. I don't recall who gave this recipe orig.
