One of my favorites is Chocolate Crazy Cake!: CRAZY CAKE 1 1/2 c. flour 3 tbsp. cocoa (more more more! about 1/4 cup!) 1/2 tsp. salt 6 tbsp. cooking oil (I like to use coconut oil!) 1 c. cold water 1 c. sugar (I use about a 1/2 cup!) 1 1/2 tsp. baking soda 1 tsp. vanilla 1 tbsp. vinegar Sift flour, sugar, cocoa, baking soda and salt directly into 8 inch square cake pan. Make 3 holes in the dry ingredients. In first hole, pour vanilla. Into another, pour cooking oil. In the last, pour vinegar. Pour 1 cup cold water over all and beat with a fork until smooth. Bake at 350 degrees for 25 to 30 minutes. Children like this and Mom will too because it is quick and easy with little preparation which means less to wash. PINEAPPLE CASSEROLE 2 (20 oz.) cans tidbit pineapple, drained 1 c. sugar (i've used brown before when out of white) 3 tbsp. flour, blend flour and sugar together 1 stick butter, melted 8 oz. grated Cheddar cheese 1 c. Ritz crackers, crushed Mix everything together, except cracker crumbs. Pour into Pyrex baking dish and bake 45 minutes in 300 degree oven. Sprinkle cracker crumbs on top. They love making the fork design on them. Quick & Easy Peanut Butter Cookies 1 cup peanut butter 1 cup sugar 1 egg Mix together. Roll into 1 inch balls and place on ungreased cookie sheet. (Add a little extra sugar if dough is too sticky to form a ball) Mash down gently by making fork crisscrosses. Bake at 350 degrees F for 7-10 minutes (depending on your oven) until they look dry and slightly brown/gold around the edges. Remove and let cool for 5 minutes. Enjoy. Guest guest Posted September 17, 2007 Report Share Posted September 17, 2007 I have tons that I love to eat, but few that I love to bake. My very favorite to make is Pflaumekuchen, or plum cake. I don't make it from scratch, so it's really easy. I use vegetarian pizza dough, stretched out on a conventional cookie sheet with edges. You can butter and flour the bottom, but I usually just use butter or a spray. Stretch it out so that it's even and stays as close to the sides as you can get it. Use dark purple plums...they don't need to be super ripe. In fact, I like them more tart than sweet. It also helps to have them less than ripe because it lessens the amount of liquid that will spill out. You can cut the plums in many ways. Quarters are easiest, but it's very pretty if you can cut them in " paper doll " fashion. That means that each half is spread out, kind of like a Charlie Brown pattern. Make sure to leave at least half an inch around the edges because the juice will go everywhere...it's delicious, but messy. Bake according to the directions on the pizza dough. I usually turn off the oven a few minutes early and let it sit in the oven. I like the dough a little softer. Some people add sugar and cinnamon to the top. I like it tart, as I mentioned, but it's also good with spices. To serve, use real whipped cream. Mmmmmmm. This can be frozen. It can be served hot, warm, room temp, cold...basically, I'll eat it any way it's served. Hands down, cookies and dessert bars are my favorites. They are small, so you don't eat too much and there is endless variety. I love it when I am at a gathering of friends and family when there is a variety of different cookies to choose from. Probably why Xmas/Yule is such a favorite holiday. All those plates of little cookies. During Christmas I make about a zillion for friends and family and neighbors!
