Guest guest Posted October 3, 2007 Report Share Posted October 3, 2007 Spinach Bean Sandwich English Toasting loaf bread or bread of choice - sliced Veganaise or Mayonnaise 1 can of Kidney beans, drained Cucumber slices Fresh Spinach leaves Tony Chachere's Creole Seasoning Toast your slices of bread. Spread with Veganaise or Mayo. Put on some fresh spinach leaves. Spoon on some beans over that. Layer some cucumber slices next and sprinkle with the Tony Chachere's Creole Seasoning. Top with another piece of bread that has Veganaise spread on it also. Wrap a paper towel around your sandwich, so you don't loose any of your goodies out of your sandwich. Enjoy immediately. We had these for dinner tonight. It was a quick filling meal. I had a big glass of buttermilk too and some celery sticks on the side.
