Guest guest Posted October 26, 2007 Report Share Posted October 26, 2007 French Cucumber Salad 1 to 2 cucumbers (1 large or two small), peeling and seeding optional 4 TB extra virgin olive oil 3 TB red wine vinegar 1-1/2 TB Dijon mustard Salt and ground black pepper, to taste Slice cucumber into thin rounds; combine vinaigrette dressing ingredients together in bowl and whisk together until smooth and creamy Toss gently with cucumbers until well coated; chill until ready to serve.
