You can thaw it out in your refrigerator for a day, and then bake it whole in the oven until toasty golden. I'm getting ready to pass my first Thanksgiving as a vegetarian, and I have always loved the food traditions of Thanksgiving, so it's going to be a big change for me. The good news is, once you start experimenting with other dishes around the holidays, they can become traditions too. Last year I made something other than my " traditional " baked ziti and my brother complained - even though he usually only eats a few bites of it! But if you want to stick with more traditional items, I've found that some - but not all! - of the mushroom gravies out there are vegetarian. Check the labels and make sure there's not meat stock involved. I'm pretty sure Campbells gravy is vegetarian - and it's fairly decent if not stellar. You might also want to check in your local natural foodstore to see if they have canned gravy varieties or mixes you can make your own. That Worthington stuff is sometimes hard for people to find in regular stores, but amazon.com seems to be selling a lot of it now via mail order. But just because you are a vegetarian now, it doesn't mean you have to give up those delicious traditional Thanksgiving foods. I make a Quorn brand roast that is very " turkey-like " without being too turkey-like. I use Hain brand gravy mixes for the gravy, and then we make all the other traditional sides [which are vegetarian] to go along with it. I use Imagine brand No-Chicken broth to make the stuffing recipe flavorful and moist.... everything is so good. I love Thanksgiving! I must admit that I'm feeling great since giving up meat almost 2 months ago, but I still have lots to learn about alternatives. Fortunately most restaurants have options these days. Where can I find Quorn roast?? I recently learned that my mom made her special Thanksgiving gravy by blending giblets and cooked veggies into a thin sauce. (She only recently admitted that it was one way to get vegetables into us kids.) I have a feeling I could make that with veggie broth and seasonings and it should taste excellent. Thanks again!
