Holiday Potluck Ideas?

Hi there,

 

I'm looking for inspiration - my colleague is hosting a huge

Thanksgiving potluck this Saturday in a heated tent in her backyard.

An unscientific sampling shows that most people are bringing

traditional side dishes - heavy on the starch. Mashed potatoes, sweet

potatoes, stuffing and the like. I'd like to bring something lighter

and preferably filled with veggies as it looks like the only green

thing there will be a greenbean casserole loaded up with butter!

 

I thought about bringing a hot marinated veggie dish (made with

blanched veggies, salad dressing and tom. sauce) but it feels

decidedly untraditional.

 

Anyone have any ideas for a lowfat, healthy, Thanksgiving side dish?

This is probably still heavier than you want but I love to steam cauliflower

and mix it in with mashed potatoes or even just mash it and serve it alone,

although it can be a little runny alone. I'm going to be making my mom's

giblet dressing without the giblets-she blends cooked veggies and giblets

into a broth. I won't be using turkey parts, but I've done a similar gravy

for a vegetarian pot pie and it tasted pretty much the same.

 

 

 

Another thing my mom does is grill chunked veggies (potatoes, bell peppers,

onions, mushrooms, broccoli. anything you like, really) in a baking dish,

drizzle on a bit of olive oil, sprinkle with parmesan cheese and seasonings,

and that's delicious, too.

How about an artichoke and spinach hot dip in a bread bowl, or an asian

coleslaw. Also Roasted Butternut Squash and Carrot Soup. I have sent it here,

so should be in the files. Take it in a crock pot.

Mandrin Orange and Strawberry Romaine Salad with sugared almonds is always a

hit.

 

Cold Thai Noodle Salad is also very delicious. My recipe for this should be

in the files here. Let me know if you are interested and can't find it and I'll

repost it.

 

On Rachel Ray, she suggests making your stuffing in muffin tins, she calls

them stuffin muffins, and then everyone get a crispy serving of stuffing. I

love doing this. I make Jalopeno Prosage Stuffing.

 

Zuchinni quiche would be delicious.

 

Today on Barefoot Contessa, she made Vegetable Tian. It looked pretty and

sounded delicious. Here is the recipe.

 

Vegetable Tian

 

Good olive oil

2 large yellow onions, cut in half and sliced

2 garlic cloves, minced

1 pound medium round potatoes, unpeeled

3/4 pound zucchini

1 1/4 pounds medium tomatoes

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 tablespoon fresh thyme leaves, plus extra sprigs

2 ounces Gruyere cheese, grated

 

Preheat the oven to 375 degrees F.

Brush a 9 by 13 by 2-inch baking dish with olive oil. In a medium saute pan,

heat 2 tablespoons of olive oil and cook the onions over medium-low heat for 8

to 10 minutes, until translucent. Add the garlic and cook for another minute.

Spread the onion mixture on the bottom of the baking dish.

 

Slice the potatoes, zucchini, and tomatoes in 1/4-inch thick slices. Layer

them alternately in the dish on top of the onions, fitting them tightly, making

only 1 layer. Sprinkle with salt, pepper, thyme leaves, and thyme sprigs and

drizzle with 1 more tablespoon of olive oil. Cover the dish with aluminum foil

and bake for 35 to 40 minutes, until the potatoes are tender. Uncover the dish,

remove the thyme sprigs, sprinkle the cheese on top, and bake for another 30

minutes until browned. Serve warm.

 

 

 

 

Have fun at this potluck. Great idea.
