Guest guest Posted November 15, 2007 Report Share Posted November 15, 2007 Axley's Orange Sandwich Cookies 3 tablespoons butter 1 1/2 cups confections' sugar 2 tablespoons orange marmalade 1/2 teaspoon vanilla extract 48 thin gingersnap cookies Beat butter in a small bowl with an electric.mixer set at high speed until fluffy, about 1 minute. Add confections' sugar; beat until mixture is crumbly. Add orange marmalade and vanilla to bowl; beat until smooth. (You can prepare the orange cream filling up to 8 hours ahead. Refrigerature; bring bowl to room temperature before spreading on cookies.) Spread 1 heaping teaspoon of orange filling over 1 gingersnap. Guest guest Posted November 17, 2007 Report Share Posted November 17, 2007 You could use Soy garden, it's just like butter, and if you're ever out of Confectionary sugar, I found out that you can just put some regular, like, Florida crystals or whatever in a food processor. Delicious stuff. Florida Crystals and sugar in the raw are great products. We make powdered sugar in our Vita Mix using it.
