I made Donna's potato and cheese tacos with leftover mashed potatoes the other night. They were so good. I'll post a recipe. I have also used left over dressing as " dumplings " in soup and that was really yummy too. I'll post my recipe for that as well. > Share you ideas for being a frugal cook. Base your meals on in season produce that is on sale. Celery was selling for 49 cents the week before Thanksgiving, so I made cream of celery soup. I like to make sandwiches from the dressing/stuffing, and the Quorn roast. Open-faced hot sandwiches with chopped Quorn roast heated through with the leftover gravy is yummy, too. I like to make a Tetrazini casserole with leftover roast, but this year I plan to make my sister-in-law's recipe for Turkey Divan, except I will make it the vegetarian way. I will post those results later on. Leftovers are great to pack up in a lunchbox to take to work since we have refrigerators and microwaves in the breakroom. We usually don't let any of it go to waste. My best idea to keep from wasting food and being a frugal cook is to plan a menu each week. It takes a little time to do, but knowing what you are going to have for dinner each night sure saves trips to the store or spending money on dinners out at the last minute. The exception is that we ate the Vegetarian meatloaf, sliced up with Veganaise on bread for sandwiches. That was delicious. Just had my last sandwich of that for lunch with some Vegetable Split Pea Soup.
