I have been vegetarian for 4 years but vegan for only almost one now and this is my first " vegan " Christmas/ Holiday Season. I had no idea how many of my cookie recipes had eggs in them and I am finding it very difficult subbing them out. I can still make my gingerbread folks but that is a very standard recipe that everyone seems to already have. I am having a HOUSE FULL (did I say that loud enough?) of guests, staring the 23rd and lasting through the 2nd. When I say " house full " I am referring to, counting my husband and myself, 11 people! I could really use some favorite, tried and true VEGAN cookie recipes that I can make now and freeze for the hordes. Can anyone help me out? Guest guest Posted December 4, 2007 Report Share Posted December 4, 2007 Hi Steff you can substitute flax meal for eggs, flax meal is now sold in the baking isle of some supermarkets and deffinately health food stores here's how.... 1 Tablespoon of flax meal and 3 tablespoons of water.makes 1 egg mix them in a small bowl and set a side to add to your recipe if you can not find flax meal use flax seeds and grind them to a powder in your food processor, 1/3 cup flax seeds add 1 cup water, 3 tablespoons of this mixture equals 1 egg put the rest in a jar and it will keep in the refridgerator for 3 - 5 days In either case substitue this to any of your regular recipes for cookies, cake or breads and such.
