Lots of Asian cuisine doesn't have any dairy or meat - you could easily do a stir fry-type meal with tofu and a yummy sauce. (Asian sauces are found by the dozens in almost every grocery store these days.) Serve it over thin noodles (even spaghetti will do) or rice. Simple and tasty. If you're more adventurous, you could try to make your own spring rolls or dumplings - they're not as hard as they sound! If you'd rather not do Asian, I can post two recipes - one Italian-esq - one Mexican-ish, that might work for you. For appetizers, here's some ideas. A simple bruschetta topping is always yummy. Diced tomatoes, garlic, EVOO, and some basil brushed over top lightly toasted baguettes. There's also a bunch of vegan appetizer options in the Files section. Some of them look downright delish. Bravo! Now for the recipes. *smile* We have a bunch of vegan recipes that are tried and true in our recipes files. All of the recipes stored in there have been shared in the past from our members and they all sound delcious. The vegan recipes are mark as such so they will be easy to find. Go take a look. Guest guest Posted December 10, 2007 Report Share Posted December 10, 2007 Cooking vegan is not that difficult. Most ethinic dishes originated vegan and were Americanized by adding meats or cheeses. For example Pasta fasouli, here in America adds sausage, but originally it was just tomatoe sauce, kidney beans, or navy beans, Italian spices,(heavy on the garlic!) and small pasta. There is a cute vegan cookbook that is all ingredients you find in most kitchens. It is has whole foods ingredients and not that processed veggie stuff you find in the supermarkets.
