How about a Lentil Soup, Italian Vegetable Soup(like minestrone), Marianated

Bean Salad, Cold Thai Noodle Salad, and some Asian Coleslaw?

Lentil Soup

 

 

INGREDIENTS:

2 cups dry lentils

3 quarts water + 6 TBSP Bill's Best " Chick-nish " Seasoning orVegetable

broth

1 onion, diced

2 celery stalks, minced

1/2 bell pepper chopped

1 carrots, chopped

4 potatoes, chopped

1/2 tsp curry pwd.

2 bay leaves

1 tsp. salt

1/4 cup tomato paste

2 cloves garlic, minced

1 tablespoon ground cumin

3-4 cups fresh spinach leaves

 

DIRECTIONS:

Combine all ingredients, except spinach in a large pot. Bring to a

boil, then reduce heat, cover and simmer until lentils are soft, 30 to 45

minutes. Remove from burner and add 3-4 cups of fresh baby spinach leaves

and stir in. Spinach will be ready in about 3 minutes. Serve with a

squeeze of lemon.

 

*Bill Best Seasoning is all Vegetarian. Here is some info about his

product. It is a blend of Defatted

soy flour, salt (solar evaporated sea salt), torula yeast, onion, garlic,

parsley, celery, and a blend of healthful herbs and spices.

We use the highest quality ingredients, non-GMO, organic wherever

possible. We use NO animal products, dairy, whey, fats, sugars, MSG,

preservatives, black or white pepper, and our sodium content falls within

the low salt dietary requirements. All our products are dry mixes to insure

Heat 2 T. Olive Oil in a large Soup Pot

 

Add:

 

1 lg Onion, finely chopped

 

2 cloves Garlic, minced

 

2 Celery Stalk, chopped

 

8 c. Water

 

8 T.. Bill Best " Chicknish Seasoning " or McKay's Chicken-Like Seasoning (you can

substitute 8 c. Vegetable Broth)

 

1 Bay Leaf

 

Dried Oregano and Salt to taste

 

2 - 16 oz Cans Great Northern Bean

 

2 - 16 oz. Cans Italian Tomatoes , chopped

 

16 oz bag of Spinach, frozen, chopped, ( I like use fresh to

sometimes)

 

Combine all of the ingredients except spinach and simmer for about 20

minutes or so. Add Spinach, stir in and remove from heat. Leave

covered.

Spinach will cook very quickly.

 

 

 

1 8oz. package of elbow noodles or small shell pasta. - Cook until

tender

and drain. Add about 1/2 c. of broth from the soup above and stir into

the

pasta. This will keep the noodles from sticking together. Do NOT add

the

pasta into the pot of soup.

 

In each soup bowl add a few noodles, ladle in soup and sprinkle with

fresh

grated Parmesan Cheese.------------Cold Thai Noodle Salad

1/2 pound spaghetti or angel hair pasta

1/4 cup soy sauce

1/4 rounded cup crunchy peanut butter, softened in microwave 15

seconds

on high

5 tablespoons cider or rice wine vinegar

1 tablespoon dark sesame oil, eyeball it

1/2 tsp. garlic pwd.

1 tsp. cayenne, ground

1/4 c. Brown Sugar

2 cups shredded cabbage and carrot mix, available in produce

department( like to shred them fresh)

1 cup bean sprouts, (optional)

1/2 c. bell pepper, chopped

Cilantro, chopped - use amount desired.

3 scallions(green onions), chopped on an angle

2 tablespoons sesame seeds

 

Cook pasta to al dente, with a bite to it, then cold shock it to

stop

the cooking process by running it under cold water in colander. Drain

the

pasta very well.

In the bottom of a large bowl, whisk together soy sauce, peanut

butter, vinegar, oil, sesame oil, cayenne, garlic pwd. and brown

sugar..(You

can use a stick(immersion) blender to make blending easier). Add

noodles and veggies and toss to combine the noodles and coat them

evenly

with sauce. Sprinkle scallions, cilantro and sesame seeds throughout

the

salad and

serve.

Vegan dinner

 

 

I'm doing a dinner for some folks that includes someone who is vegan ... I'm

not used to

cooking that way AND I live in the middle of nowhere so finding specialized

foods isn't the

easiest ... any suggestions on a couple of main courses and a couple of side

dishes that are

EASY & FLAVORFUL?
