Guest guest Posted January 21, 2008 Report Share Posted January 21, 2008 This recipe sure does sound yummy!...I know I have done something similar in the past with the Tofurkey Italian Sausage, but more recently, when I purchased some tofurkey sausage, I could not remember my own recipe..But I just came up with another way to enjoy toufurkey sausage. I had some potatoes that needed to be used up and so I peeled and boiled the taters in a little no- chicken broth, with a couple Tbsp. of grated onion, bay-leaf, paprika, and dill-seed...When the potatoes were almost done, I added a jar of sauerkraut. After the potatoes and sauerkraut were good and hot, I added a couple of tofurkey italian sausages, put a lid on the pot, and simmered everything until the tofurkey was nice and hot ..Well, the potatoes and sauerkraut were good , but the tofurkey sausage did not taste that good.--(but not to worry), I ended up toasting a couple pieces of rye bread, and after putting mustard on one slice and vegenaise on the other, I made something close to a reuben sandwich, using slices of the tofurkey sausage, and then spooning sauerkraut over it...I did not have any (soy) swiss cheese, but I thought the sandwich was very good anyway.--There were some small pieces of potato in the sauerkraut that I spooned onto the sandwich, which I think may have added to the flavor. My daughter took some fresh, basil, rosemary and parsley and put it through the mini chopper with some olive oil, then spread this on the rolls and baked them. I sauteed some onions, garlic, and bell peppers until the onions were soft then added a can of chopped tomates, stirred until heated. Place the tofurkey in the roll spoon the onion mixture over the sausage cover with a slice of mozzarella cheese bake until the cheese is melted. Yumm-o Gayle **************Start the year off right.
