I tried the tofu fake egg salad and it was a not in my mouth experience, so that is out. I need sandwich inspiration and ideas. Please help! Spread cream cheese on whole grain bread and top with avocado slices, cucumber slices, and sprouts. I grow my own sprouts every week in a quart mason jar; everyone says they are so much better than store-bought. Maybe sprinkle a little Adobo seasoning and a drop or two of Sriracha sauce, too. Cream cheese is one of those things I always keep on hand for my favorite brekkies - toasted pumpernickel with cream cheese. Isn't it great that we can share ideas and recipes? One time I made this peanut butter mousse using two containers of the tofutti cream cheese, 1 cup or so of the earth balance margerine (all vegan), 2/3 cup or less of some powdered sugar (organic from Trader's) and of course some of the pre-stirred organic peanut butter about 1 cup I think it was the Maranatha brand. Then I made this Chocolate Cake (eggless and dairyless) the recipes are not too hard to find on the web for one of those. Then I made a two layer cake and put this peanut butter mousse stuff between the layers. Then I made a vegan peanut butter cream out of a tad of soy milk, 1/2 cup peanut butter and a couple or tablespoons of powdered sugar or so all blended and I also melted some (2/3 cup chocolate chips or so) in the microwave on 1/2 the heat for 1 min. or so. I drizzled both the PB cream stuff and the melted chocolate chips. OH MY GOD!!! Everyone freaked it tasted so great plus it was light non-dairy and perfect for my birthday. Everyone absolutely loved this cake. Fun Fun! Thanks for sharing all the ideas about the sandwiches I've got to try to Green Godess one and the Portebello one. They both sound yummy! Arugula is a spicy little leaf, which some describe as bitter and others characterize as having a " peppery-mustardy " flavor. Because it is so potent on its own, it is often mixed with milder greens to produce a nice balanced salad. It can also be sautéed in olive oil. Add lettuce, some halved and stoned olives, a couple of cherry tomatoes and a few halved falafel and you have a substantial meal.
