Sandwich ideas needed

Periodically I get really tired of the same old same old and right now the usual

sandwich of cheese, peanut butter, cole slaw or carrot salad is really tiresome.

I tried the tofu fake egg salad and it was a not in my mouth experience, so that

is out. I need sandwich inspiration and ideas. Please help! Hugs, Jeanne

Have you tried the Smart Deli veggie slices? They come in ham, roast beef, and

I believe turkey style, and they are pretty good on a sandwich with veganaisse,

vegan cheese, and mustard!

Hummus makes a great sandwich,

also take a can of chickpeas, drain it mash it add some mayo a touch of

mustard some pickle relish, salt and pepper makes a great dip or sandwich.

The one sandwich I really like is called a green goddess. It's not

vegan, because it has cream cheese in it. Spread cream cheese on

whole grain bread and top with avocado slices, cucumber slices, and

sprouts. I grow my own sprouts every week in a quart mason jar;

everyone says they are so much better than store-bought.

This could easily be veganized by using a vegan cream cheese like Tofutti.

This sounds yummy... I'm going to try it. Maybe sprinkle a little Adobo

seasoning and a drop or two of Sriracha sauce, too.

Good grief, I am an idiot! I make pita every week and hummus as well but never

thought to make it a sandwich. DUH!!!! I think tomorrow I'll try a hummus and

cole slaw sandwich. YUM! Jeanne

This sounds so good! I'm absolutely going to put avocados on my grocery list

this week. Cream cheese is one of those things I always keep on hand for my

favorite brekkies - toasted pumpernickel with cream cheese.

 

Isn't it great that we can share ideas and recipes?

 

Oh...a quick candy...dip blueberries in a good chocolate and chill till firm.

Store in the refrigerator. Keep away from my grandson. He ate every one of the

Off the subject of sandwiches but about this Tofutti Cream Cheese

product. One time I made this peanut butter mousse using two

containers of the tofutti cream cheese, 1 cup or so of the earth

balance margerine (all vegan), 2/3 cup or less of some powdered sugar

(organic from Trader's) and of course some of the pre-stirred organic

peanut butter about 1 cup I think it was the Maranatha brand. Then I

made this Chocolate Cake (eggless and dairyless) the recipes are not

too hard to find on the web for one of those. Then I made a two layer

cake and put this peanut butter mousse stuff between the layers. Then

I made a vegan peanut butter cream out of a tad of soy milk, 1/2 cup

peanut butter and a couple or tablespoons of powdered sugar or so all

blended and I also melted some (2/3 cup chocolate chips or so) in the

microwave on 1/2 the heat for 1 min. or so. I drizzled both the PB

cream stuff and the melted chocolate chips. OH MY GOD!!! Everyone

freaked it tasted so great plus it was light non-dairy and perfect for

my birthday. Everyone absolutely loved this cake. Fun Fun! Thanks

for sharing all the ideas about the sandwiches I've got to try to

Green Godess one and the Portebello one. They both sound yummy! See

My current favorite sandwich is Hummus, Arugula and Avocado on whole wheat bread

or a spelt tortilla. Something about the creaminess of the spread and the

pungent taste of arugula just makes it perfect! Plus - can easily be vegan if

you watch your bread choice.

I've never heard of Arugula. What is it?

It is a type of lettuce.

Arugula is a spicy little leaf, which some describe as bitter and others

characterize as having a " peppery-mustardy " flavor. Because it is so potent on

its own, it is often mixed with milder greens to produce a nice balanced salad.

It can also be sautéed in olive oil. You can substitute most any green for

arugula, but the closest matches are Belgian endive, escarole, and dandelion

greens.

Add slices of yellow or orange bell papper to hummus in your sandwich,

Jeanne. They goes together beautifully. Add lettuce, some halved and

stoned olives, a couple of cherry tomatoes and a few halved falafel and

you have a substantial meal.

I definitely agree - a whole salad of arugula is a little too much! :)
