Judy Blueberry Spinach Salad Hearty and healthy - a combination hard to beat -1 pound fresh spinach or Bibb lettuce, torn into pieces a.. 1 cup fresh blueberries b.. 1 (4-ounce) package crumbled blue cheese or feta cheese (I used feta cheese) c.. 1/2 cup toasted pecans d.. Raspberries, to garnish (optional) INGREDIENTS FOR DRESSING: a.. 1/2 cup vegetable oil b.. 3 tablespoons blueberry or white wine vinegar c.. 1 teaspoon Dijon mustard d.. 1 teaspoon sugar e.. Salt, to taste For dressing: Combine all ingredients well and set aside. Place torn greens, blueberries, blue cheese and pecans in a salad bowl. Just before serving, toss gently with dressing.
