In prepping to move, I came across an unopened jug of maple syrup that's probably three years old and an opened, refrigerated jug of apple cider syrup of the same age. The cider syrup still smells OK, but I don't want to poison anyone. I hate to throw them away, as they're both high quality, local produced, but I'm not sure about using them. On her show yesterday, she had a couple that made maple syrup the old fashioned way, and she talked about how to store it and such. It would be on her website. I'm pretty sure that she said that it could be kept indefinately in the cupboard but that it needed to be refrigerated after opening. I don't remember exactly, but I could have sworn that she also said that if it does get a little mold on the top, there is " something " that you can do to " fix " it and you can cook with it. Guest guest Posted March 4, 2008 Report Share Posted March 4, 2008 As long as there is no mold, you should be fine. Ideally, syrup should be kept in the refrigerator and will remain fresh for a year. But I have had it much longer than that. The sugar is what keeps it from spoiling. Therefore, even when you find a little mold in syrup, you just filter it out with cheesecloth.
