I am making veggie tacos. Loads of fresh chopped veggies, sour cream, veg refried beans, and veggie ground by Yves with taco seasoning mixed in. I also, like I say, was eyeing that coutry-style casserole too as a possibility. Also I've been wanting to make a mock meatloaf again sometime. I got the recipe for it off of Compassion Over Killing's website and I absolutely LOVED it!! www.tryveg.com. I medium large onion chopped a bunch of chopped garlic some corn A can of black beans drain 1/2 the liquid chile powder cumin powder black pepper Mrs Dash paprika some crushed red pepper Saute the onions with some black pepper when onions start to soften add garlic with some crushed red pepper, stir add chile powder add the corn stir in cumin powder add black beans with rest of liquid and Mrs dash and paprika stir to combine eat and enjoy. Yesterday we did a BBQ and I made a macaroni salad with Veganaise mayo. Even though everyone else in my house eats an omnivorous diet, they insist on me using Veganaise in any salad that calls for mayo now. ~ PT ~ If any kid ever realized what was involved in factory farming they would never touch meat again.
